We believe good food is fuel for a life well lived and we're on a path to source ingredients of the highest quality, produced in a healthy and sustainable way. To this end, we've created a partnership of like-minded companies: Coleman Natural and Horizon Organic.
Good Food on a Grand Scale
Vail Resorts will serve natural, hormone-free meats and poultry and organic dairy products in our on-mountain restaurants at Vail, Beaver Creek, Breckenridge and Keystone and Heavenly beginning in November for the 2007-2008 ski season.
Our resorts will prepare and serve over 450,000 pounds of Coleman Natural meats and nearly 189,000 pounds of Horizon Organic butter, cheese and yogurt, plus 64,000 gallons of certified organic milk and cream.
Our five mountain resorts serve over 2.5 million lunches each ski season at approximately 40 on-mountain venues. The organic dairy products and natural meats procured through the Good Food Partnership will be used to prepare meals in on-mountain kitchens by our resort chefs.
Coleman Natural Meats
Our commitment to offering our guests high-quality, sustainable foods includes all-natural beef, poultry, lamb, pork and deli meats supplied by Coleman Natural Foods. Coleman® Natural meats are free from antibiotics, added hormones, artificial ingredients and preservatives and Coleman Natural ranchers pledge humane and sustainable raising practices.
From filet mignon at Keystone’s AAA Four Diamond-rated Alpenglow Stube, to chicken strips at Vail’s Two Elk Lodge, Vail Resorts will prepare and serve over 450,000 pounds of Coleman Natural meat. Coleman Natural will also supply meats and poultry to our Grand Teton Lodge Company which operates Jackson Lake Lodge, Jenny Lake Lodge and Colter Bay Village in Grand Teton National Park, Wyo.
Horizon Organic Dairy Products
Horizon Organic is the nation’s leading brand of U.S.D.A certified organic milk with more than 80 products produced without the use of antibiotics, added growth hormones or pesticides. Through our partnership with Horizon Organic, our resorts will prepare meals at on-mountain dining locations during the ski season using organic dairy products such as butter, cheese, milk and yogurt.
Our announcement represents our first step in serving Good Food on a Grand Scale and we will look to convert additional menu items and ingredients to more natural and organic alternatives in the years to come. While more than 87 percent of our dairy needs will be organic for the 2007-2008 season, the sheer size and unprecedented nature of this effort prevented us from sourcing certain items in sufficient quantities. Our Company will work closely with all of our vendors to increase the amount of natural and organic foods offered for the 2008-2009 season and beyond.
